Today I will be making green chilli pickle.
This is a hot and spicy pickle.
Green chilli pickle can spice up any meal.
Indian meals are generally served with different condiments
and pickles are most commonly used.
For this recipe we need:
20 serrano chillies,
which I have already washed and dried.
3 tablespoons of coriander seeds (dhania)
1.5 tablespoons of fennel seeds (saunf)
1 teaspoon of mustard seeds (rai)
1 teaspoon of fenugreek seeds (methi)
3 teaspoons of salt
1 teaspoon of mango powder (amchoor)
1/8 teaspoon of asafoetida (hing)
1/2 teaspoon of turmeric (haldi)
3 tablespoons of oil
I prefered using mustard oil.
1 tablespoon of vinegar
This is a very easy recipe to make.
First I will prepare the spices
and then fill the green chillies with spices
and let it marinate for 2 days, before you serve.
First I will slit the green chillies lengthwise.
Slit the green chillies, lengthwise.
First I will grind all the seeds.
Coriander seeds
Fennel seeds
Fenugreek seeds
And mustard seeds.
I like to use the the coffee grinder.
It works really good.
You need to grind this coarsely.
This looks good and has a very nice aroma
of fresh seeds.
And now I am going to mix all the other spices.
Mango powder
Salt
Turmeric
And asafoetida.
Mix it well.
And I am going to heat the oil,
before I mix with the spices.
Heat is on, medium high.
Oil should be very hot before we add this to spices.
Oil is very hot and I am going to add the oil to spice mix.
And as you see the spices starts sizzling.
Mix it well.
And as you are mixing,
spices are smelling really good.
Going to add the vinegar.
Mix it again.
And now spices are ready to stuff the green chillies.
Before you work with chillies,
it's a good idea to oil your hands.
That way hands does not burn.
So now we are going to take one chilli,
open it and fill the spices.
Take chilli, open it
and fill with spices.
Open it and fill with spices.
Green chilli pickles are looking great.
Even the smell is very spicy and hot.
You should store the pickle in glass jar
and leave it at room temperature to marinate for 2 days.
You can store them in refrigerator for about a month.
